25 minutes 8 Steps

  1. Gather the ingredients

    • 280g plain flour, plus 1 tbsp for the berries
    • 150g caster sugar
    • 2 tsp baking powder
    • ½ tsp salt
    • Zest of 1 lemon
    • 120ml neutral oil
    • 1 egg
    • 240ml buttermilk
    • 1 tsp vanilla extract
    • 200g blueberries
    • 2 tbsp demerara sugar
  2. Heat the oven

Heat the oven to 200°C (180°C fan) and line a 12-hole muffin tin with cases.

  3. Mix the batter

Whisk the flour, sugar, baking powder, salt and zest. Whisk the oil, egg, buttermilk and vanilla, then fold the two together until just combined.

  4. Fold in the berries

Toss the blueberries in the extra flour so they don't sink, then fold them in.

  5. Fill the cases

Fill the cases right to the top and sprinkle with demerara.

  6. Bake hot

    5 minutes

A blast of high heat makes the domes rise.

  7. Finish baking

    15 minutes

Lower the oven to 180°C (160°C fan) without opening the door, and bake until golden and springy.

  8. Cool

    5 minutes

Cool in the tin before lifting out.
